Can we assign an article field to a category instead of a post (like the standard custom fields) and output this in a category blog?
Example: Sponsors should not only be linked to a post but also to a category. The field can be created, but the output is unclear...

You should be able to create it like a normal field. The output is down to the Joomla standard output for category custom fields, or down to your template.

No, you cannot use the Articles Linked field for categories.
The Articles Linked shows articles linked to it, not categories.

Do I understand correctly?
1. we can create custom article fields for categories and link articles in a category.
2. we cannot link articles as this only works at article level.
3. question: Can we output values from an item field in a category (on a blog page of the category)?

You should be able to add a normal Articles Field to a component and then - depending on your category view and/or template - be able to show those linked article on the category blog/list page.
You cannot use the Articles Linked field on the articles to link back to the category which is linking to them (via that normal Articles Field field).
