Hello Peter,
we're using Joomla! 3.10.15-elts and Email Protector v5.2.0 [PRO].
The Option "Protect in PDFs" is configured to "No".
Is it possible to exclude the extension Convert Forms Pro because the mail adresses in the generated pdf files should be untouched?

Then it seems Convert Forms Pro is not telling Joomla that the type of the document is a pdf, so Email Protector cannot tell it is a pdf.
Not something I can fix on my side.

Could I send Tassos you're pro extension please so he can have a look to the source code to check any compatibility issues between Email Protector PRO and Convert Forms Pro?
