Hello, how would we go about targetting Content Templater buttons when creating Guided Tours in the new Joomla 4.3?

Sorry, I thought I already answered this back then...
This depends on what editor you use. When you use the core TinyMCE editor, this doesn't seem possible.
The clicks on buttons inside the editor - so also on the 'CMS Content' button, and on any buttons inside' are contained within the editor. So the Guided Tour cannot track if you already clicked on it and will get stuck on that step.
If you use JCE with the editor buttons at the bottom of the editor, you can kinda make this work. But it is still a bit buggy.
This all has nothing to do with Content Templater itself. This is down to the Guided Tours and how that works. It has quirks and limitations. For further help on how to set things up in Guided Tours, I recommend you ask around on the Joomla forum:
